Chickpea Curry
A rich and warming Indian-style chickpea curry with tomato and spices, served over rice.

Instructions

Cook rice according to package directions.

Saute onion in oil over medium heat for 4 minutes.

Add minced garlic and curry powder, cook 1 minute.

Add canned tomatoes and cook 4 minutes until reduced.

Add drained chickpeas and 1/2 cup water.

Simmer 15 minutes until sauce thickens.

Season with salt and serve over rice.
