Dice carrots and onion small.

Heat oil in a wok or large skillet over high heat.

Stir fry carrots and onion for 3 minutes until softened.

Add cold rice, breaking up clumps, and fry 3 minutes.

Push rice to one side, scramble eggs in empty space until set.

Mix eggs into rice, add soy sauce and toss.
