Lemon Herb Rice

Instructions

Melt butter in a medium pot over medium heat.

Add minced garlic and cook 1 minute, do not brown.

Add rice and stir to coat with butter. Toast for 1 minute.

Pour in chicken broth and add lemon zest.

Bring to a boil, then reduce heat to low. Cover and cook 18 minutes.

Remove from heat and let steam, covered, for 5 minutes.

Fluff with a fork. Stir in lemon juice and chopped parsley.
