Mediterranean Chickpea Salad
A bright no-cook salad with chickpeas, cucumber, tomato, and olives tossed in lemon herb dressing. Ready in 10 minutes.

Instructions

Drain and rinse chickpeas. Add to a large bowl.

Dice cucumber and halve cherry tomatoes. Add to bowl.

Thinly slice red onion and add along with olives.

Whisk olive oil, lemon juice, oregano, and salt in a small bowl.

Pour dressing over the salad and toss well.
