Instructions

Peel and cube potatoes into 1-inch pieces.

Melt butter in a large pot over medium heat.

Saute onion and garlic until soft, about 4 minutes.

Add potatoes and cover with 4 cups water.

Boil 15 minutes until potatoes are fork-tender.

Mash roughly with a potato masher, leaving some chunks.
