Spinach Lentil Dal
A fragrant Indian-style lentil and spinach dal with warming spices. Serve over rice for a complete and filling meal.

Instructions

Rinse lentils and cook in 2.5 cups water until soft, about 20 minutes.

Heat oil in a separate pan. Saute onion until golden, add garlic.

Add cumin and garam masala, stir 30 seconds.

Add diced tomatoes and cook 5 minutes.

Stir in cooked lentils and frozen spinach.

Simmer 5 minutes until spinach thaws and dal thickens. Season and serve.
